In the Toolbar to the left click the Knife icon – about 1/3rd of the way up the bar (from the bottom). The tool will initialise and the mouse cursor will change to a knife sprite. Once Edit Mode is active and the Toolbar tools change to suit, the Knife tool will be available for use.
