Is Gentoo better than Ubuntu?
Ubuntu wins on ease to start, several of packages, and convenience. Gentoo has the advantage of becoming the most performance-wise, just as their goal is. You must choose what your priorities are and go for it. The number one thing that you must consider is the distribution that matches your needs for your system.

According to this thread development seems still pretty active, but it doesn't reveal much about users. As an embedded dev that needs to cross compile, it's amazing. Gentoo suffers from "the developers know best" syndrome.

Gentoo is indeed a good way to learn about Linux but you'll need to invest some time and patience on it. This is not the easiest distro for a beginner. I strongly recommend learning basic shell / unix commands before (cd, mv, ls, cat , pwd, grep, | , >, >> , vim or nano , cp , ... )
Is Gentoo hard to maintain?
Installing Gentoo can be about as hard as Arch to maintain & install after learning these 3 steps. The only added complexity is the fact that there will be build errors and an enormous amount of time to compile stuff.

tl;dr: Because its the software stack that matters, and both distros compile their software more-or-less the same, Arch and Ubuntu performed the same in CPU and graphics intensive tests. (Arch technically did better by a hair, but not outside the scope of random fluctuations.)
Why is Arch Linux so fast?
It's fast because there is nothing included. The more things you add the slower it will get. Especially if you're on slow hardware. It could also have something to do with the fact that Arch is a "bleeding edge" distro (I really don't like that phrase).

Arch Linux is a rolling release distribution. ... If a new version of software in the Arch repositories is released, Arch users get the new versions before other users most of the time. Everything is fresh and cutting edge in the rolling release model. You don't have to upgrade operating system from one version to another.
